Step-by-Step: How to Fillet an Aloe Vera Leaf
Step 1 — Stand the leaf upright and drain the aloin
Cut about 2cm off the base of the leaf (the cut end). Stand the leaf upright in a shallow dish or glass, cut-end down, and leave it for 10–15 minutes. You'll see a yellow-tinged liquid drain out — this is the aloin, the bitter latex compound found just beneath the outer skin. Draining as much of this as possible before you cut makes the next steps much easier.
Step 2 — Trim the spiky edges
Lay the leaf flat on your chopping board. Using a sharp knife, slice off the serrated edges along both sides of the leaf in one clean cut. This gives you a flat, manageable piece to work with.
Step 3 — Remove the top skin
Slice horizontally along the top flat surface of the leaf, as close to the skin as possible, to remove the green outer layer. Think of it like filleting a fish — keep the knife flat and use long, smooth strokes. You'll start to see the clear gel beneath.
Step 4 — Lift the gel from the bottom skin
Flip the leaf over and repeat on the other side, sliding the knife between the gel and the bottom green skin. The gel should come away in a clean, wobbly slab.
Step 5 — Rinse thoroughly
This is the most important step. Rinse the gel slab under cold running water for at least 60 seconds, turning it over and gently rubbing the surface. This removes any remaining aloin residue. The gel should look completely clear — if you see any yellow tinge, keep rinsing.
Step 6 — Cube and use (or store)
Cut the rinsed gel into rough cubes. It's now ready to add directly to your blender or juicer. If you're not using it immediately, store in an airtight container in the fridge for up to 3 days, or freeze in an ice cube tray for up to 3 months.

For a single smoothie or juice serving, use roughly 2–3 tablespoons of fresh aloe gel (about 30–45g). More than this can have a laxative effect, so start small if you're new to it and build up gradually.
