Carrot & Ginger Soup
As summer gives way to autumn, this is the soup we reach for first. Silky smooth, gently spiced with fresh ginger, and made with the sweetest carrots of the British season — it's warming, nourishing, and ready in under 40 minutes. A proper bowl of comfort.
Ingredients
- 700g Washed Carrots, peeled and roughly chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 30g fresh ginger, peeled and grated (about a thumb-sized piece)
- 1 litre vegetable stock
- 1 tbsp olive oil or coconut oil
- 400ml coconut milk (optional, for a creamier version)
- Juice of 1 orange
- Sea salt and black pepper
- To serve: a swirl of cream or coconut yoghurt, toasted seeds, fresh coriander
Method
- Heat the oil in a large saucepan over a medium heat. Add the onion and cook gently for 5–6 minutes until softened.
- Add the garlic and ginger and cook for a further 2 minutes, stirring frequently.
- Add the carrots and stir to coat in the aromatics. Pour over the stock, bring to the boil, then reduce to a simmer.
- Cook for 20–25 minutes until the carrots are completely tender.
- Add the orange juice (and coconut milk if using), then blend until completely smooth using a stick blender or in batches in a blender.
- Season generously with salt and pepper. Reheat gently if needed.
- Serve with a swirl of cream or coconut yoghurt, a scatter of toasted seeds, and fresh coriander.
Tips
- For extra depth, roast the carrots at 200°C for 20 minutes before adding to the soup.
- This soup freezes beautifully — make a double batch and freeze in portions for quick weekday lunches.
