Summer Berry & Coconut Yoghurt Breakfast Bowl
Start your morning the right way with this vibrant coconut yoghurt breakfast bowl. It takes just 5 minutes to assemble, requires zero cooking, and is naturally sweetened with organic Medjool dates and seasonal fruit. It's also completely dairy-free, making it a brilliant option for the whole family.
Ingredients (serves 2)
- 400g Cocos Natural Coconut Milk Yoghurt
- 125g Organic Raspberries
- 2 Fairtrade Bananas, sliced
- 4 Organic Kiwis, peeled and sliced
- 4 Medjool Dates, pitted and roughly chopped
- 2 tbsp granola or rolled oats (optional, for crunch)
- A drizzle of honey or maple syrup (optional)
- A few fresh mint leaves to garnish
Method
- Divide the coconut yoghurt between two bowls.
- Arrange the raspberries, banana slices and kiwi on top.
- Scatter over the chopped Medjool dates and granola or oats if using.
- Drizzle with a little honey or maple syrup if you'd like extra sweetness.
- Finish with a few fresh mint leaves and serve immediately.
Tips & Variations
