Ingredients

• 1 ripe Mango, peeled and diced
• ½ Red Pepper, finely diced
• ½ Yellow Pepper, finely diced
• ½ Red Onion, finely diced
• 1–2 Red Chilli Peppers, deseeded and finely chopped (adjust to taste)
• Handful of Fresh Coriander, roughly chopped
• Juice of 1 Lime
• 8 ripe Cherry Vine Tomatoes, halved
• Pinch of sea salt and black pepper

Method

1. Prep your ingredients. Peel and dice the mango into small, even cubes — roughly 1cm pieces work well so every bite has a good balance of flavours. Dice the peppers to a similar size, halve the cherry vine tomatoes, and finely dice the red onion and chilli.
2. Combine. Add the mango, peppers, cherry tomatoes, red onion, and chilli to a large mixing bowl. Toss gently to combine.
3. Season. Squeeze over the lime juice, add the chopped coriander, and season with a good pinch of sea salt and black pepper. Stir everything together.
4. Rest. Cover and leave in the fridge for at least 15–20 minutes before serving. This allows the flavours to meld beautifully.
5. Taste and adjust. Give it a final taste — add more lime for brightness, more chilli for heat, or a touch more salt to bring everything together.

Serving Suggestions
